Guacamole. Everyone makes it a bit different – tomato, or no tomato. Garlic, or no garlic, Chunky, or smooth. Lots of cilantro, or none at all. Everyone claims to have THE authentic recipe, or the one their Mexican grandmother made, or their roommate from San Diego taught them, or what have you. I’m not doubting them, it’s just that saying there is ONE recipe for Guacamole is kind of crazy!! This recipe happens to be the one I love the best. Slightly chunky, slightly garlicky, with bit of ripe tomato, flecks of cilantro, and tart lime. Whether scooped up with crunchy tortilla chips, ideally hot from the fryer with salt clinging to them, or scooped into tacos or burritos or fajitas… on top of a taco salad, or smooshed onto a piece of toast and drizzled with hot sauce… well, let’s just say I loooove my guac!
