Mexican coffee, which is also known as Café de Olla, is coffee that’s been brewed with dark sugar, and then spiced with vanilla and cinnamon. Sometimes orange zest is added as well. The bittersweet coffee is especially suited for cooler days.
I was inspired to make this ice cream cake way back in December when Mövenpick ice cream challenged me to create a recipe for them. Now that it’s the perfect weather for ice cream pie, I thought it would be great to share the recipe again!
The recipe is very loosely inspired by the Homesick Texan, but I take the shortcut of using coffee ice cream and just adding some vanilla and cinnamon!
