Mexican Coffee Ice Cream Pie

Mexican coffee, which is also known as Café de Olla, is coffee that’s been brewed with dark sugar, and then spiced with vanilla and cinnamon. Sometimes orange zest is added as well. The bittersweet coffee is especially suited for cooler days.

I was inspired to make this ice cream cake way back in December when Mövenpick ice cream challenged me to create a recipe for them. Now that it’s the perfect weather for ice cream pie, I thought it would be great to share the recipe again!

The recipe is very loosely inspired by the Homesick Texan, but I take the shortcut of using coffee ice cream and just adding some vanilla and cinnamon!

Instructions
  1. To make cookie crust: Heat the oven to 350F/180C and arrange a rack in the middle. Lightly grease a pie plate. Place chocolate cookies in the bowl of a food processor fitted with a blade attachment and process until the pieces are about the size of peas. Stop the motor, add melted butter, and continue to process until the crumbs are fine, about the size of coarsely ground coffee. Pour crumb mixture into a pie plate and your fingers, press firmly and evenly into the bottom and up the sides. about 10 to 15 minutes. Cool completely before filling.
  2. To prepare filling: Place slightly softened ice cream into a mixing bowl and add other ingredients. Stir gently to combine. Spoon filling onto cooled cookie crust and smooth. Place in freezer for 1 hour.
  3. Prepare Ganache: Melt together chocolate and cream, then spread over frozen pie. Freeze again 1 hour.
  4. Prepare whipped cream: Place all ingredients except chocolate in the bowl of a mixer and beat well until cream is softly stiff.
  5. Remove frozen pie from freezer, spoon whipped cream over the top, sprinkle with chopped chocolate. Using a hot knife, carefully slice and serve!
