  1. Build a medium-hot fire in a charcoal grill or heat your gas grill to high. Brush the grill with oil or use an oiled paper towel held with grill tongs. Combine the chile powder and the cayenne.
  2. Grill corn, turning occasionally, until it is cooked through and lightly charred, about 10 minutes. Remove from the grill and immediately coat each ear with mayonnaise. I use a silicon brush. Sprinkle each with cheese and a pinch of chile powder mix. Squeeze 1 lime slice over each ear and serve.
